Low Hanging Clouds in Seattle - Beautiful & Haunting!! - Space Needle - Seattle, Washington:

Just one more week and I’m off to Seattle! I find myself thrilled to be visiting another foodie place. So far my boyfriend and I have been doing our research.

Yesterday we watched Anthony Bourdain Layover episode featuring Seattle. About ten minutes into it and I had a fan girl moment when they mentioned one of the restaurants that I’m dying to go try. He raved about how delicious that place was and as I was watching my mouth couldn’t help but water.

So places that I feel we have to go to of course involve seafood. One of the places is named after one of my favorite books, The Walruses and the Carpenter. They are famously known for their oysters which is one of the things that Anthony Bourdain couldn’t get enough of. Then there is their night life which involves some weird and creative cocktails. There were so many featured on the show that I wouldn’t know which one to chose from.

But one place I know I have to stop for breakfast is Seatown Seabar & Rotisserie. They have some delicious crab meat there. Their crab eggs Benedict with a side of hash browns I heard is a must have. I know for a fact that my boyfriend won’t go against that idea because of his love for crab.

Another idea we have is to drive to Canada and have some sushi there since we heard that is the best place to have sushi. If not then we might make a spurge decisions and  go to Sushi Kashiba for  their omakase experience.

P.s. I heard that the restaurants at Seattle airport have the best clam and salmon chowder. So once we land I know that I will have to go and see for myself.

Monday Motivation

This Saturday was my little sister’s birthday.

She finally turned 21 this year, so we of course went to Vegas. My aunt picked me up after work and we headed straight to my mom’s house. Once we got there we picked them up and made our way to Las Vegas.

It was a girls getaway and it was very refreshing to spend time with my family but also to be apart of a moment that my sister will remember forever. She of course was on a lucky streak when she turned her $5 into $25 dollars. We even went to Excalibur to watch the Tournament of Kings, which is a fun family dinner show.

The weekend couldn’t have been any better. Everyday I feel so grateful that I have an amazing family that loves me unconditionally. There is no greater feeling then spending time with the people that love you.

Sugar free Dessert?

Sorry I have MIA lately. These past few weeks were pretty hectic.

So today I decided to share with you what I decided to make for Thanksgiving. Our new tradition is that we celebrate Thanksgiving on Saturday. We do this mostly because we have the whole weekend to enjoy our thanksgiving feast.

Now that my boyfriend has to limit his carb intake I decided to make a dessert that everyone could enjoy. I looked through my Pinterest to see if I could find a recipe that was pretty easy to make and would taste good too.

I found a recipe for chocolate pumpkin sex in a pan. It is a low carb, sugar free and gluten free tasty dessert based off of a dessert called better than sex.

Amazingly if you follow the directions it is fairly easy to make. As I was finishing one thing after another I caught myself thinking that I was doing a great job. Since there are so many layers to the dessert it is very important that you start off with a clean kitchen and tabletop. If not things will be chaotic.

First step is making the crust. Grab your 8×8″ pan and spray some baking oil on it so it won’t stick.You combine Almond flour and chopped pecans in a large bowl. Then you pour in melted butter. Once it thickens you spread it out on the pan making sure it is evenly spread. After that you baking it in the oven for about 20-25 minutes at 325 degrees.

When it gets out of the oven you want to make sure that it is in an area to cool down.

After that you want to get the pumpkin layer started. So you grab the soften cream cheese and mix it with the sweetener. Once its mixed you will put in the pumpkin puree, vanilla extract and the spices it asks for. When the crust has cooled you will spread this on top of the crust evenly.

The next step is to get the chocolate layer ready. Now here is when things can get pretty tricky so I recommend you check out the original recipe for all the details. You start off by getting a medium size pan and putting it under medium heat. When the pan is already warmed up you start to put in the almond milk, whipping cream and sweetener. I recommend using a whisk to stir the ingredients all together. Once you see that the sweetener has dissolved  you slowly pour in the egg yolks with some warm cream. After slowly whisking the ingredients you want to low the temperature and put in the xanthan gum. It is important that you whisk it at a fast pace.

The next step is to add in the cocoa powder and cook it once it thickens (4-6 minutes). You then want to remove it from the heat and add in the unsweetened chocolate pieces and butter. When it has smoothened down you want to add in the vanilla extract. Once that is done you simply layer it on top of the pumpkin layer and refridgerate that for two hours.

 

Finally you make the whip cream topping (which is delicious btw). Something I changed about this recipe is the way that I whipped the cream. Instead of beating the cream I simply got our Ninja blender and threw in the whipping cream, sweetener and vanilla extract. It whipped it to perfection.

So after that you want to take out your dessert from the refrigerator and layer the whipping cream on top. I decided to decorate it by sprinkling cocoa powder on top. Then I got a cheese grater and grater the unsweetened chocolate on top. After that you want to put it back in for another hour to keep the whip cream firm. Here is my final product!

My Original Chef

Many people would never guess that my boyfriend was the only one in our relationship that really knew how to cook. I was 20 years old when I met him and sometimes it shocks me how much I have learned from him. He is not just my boyfriend but my role model.

So as I watched him, I began to pick up some cooking skills. My skills improved significantly that my boyfriend stopped cooking. Now there are moments when I miss his cooking. As any good boyfriend would do on my birthday month, he surprised me with a meal.

There is a local Asian market called H Mart and it is the best place to go treat hunting. We found some delicious ribs there and decided to buy some and make it at home. So today I will be sharing how my boyfriend makes short ribs.

First you put in some oil, we used Canola oil. Once the pan is slightly warmed you slowly put in the meat.

We cooked each side for about 3 minutes each.

Once it has brown you want to take the meat to the cutting board and chop it into pieces.

Then throw it back into the pan until it is crispy.

When that is all done we get a spoonful of rice and enjoy them together.

Meal Prep Time

Yesterday I decided to prep my lunch for the rest of the week.

When I was looking through Pinterest I found this recipe for Grilled Chicken and Veggie bowl.  Most of the ingredients I already had at home so I thought why not try it.

First I cut the three large boneless, skinless, chicken breast into smaller pieces. After that I stabbed them with a knife and got the mallet and tenderized the chicken breast.

After that I rubbed on the mixed spices of garlic salt, black pepper, salt, paprika, and grounded cumin.

I marinated the chicken overnight, I will admit that I made a mistake and didn’t read the instructions carefully. I should’ve added a lime to the marinate. Since I missed this step I just added after I cooked it.

The next morning I used my George Foreman grill to cook my chicken. I cook them for about 5 to 7 minutes depending on how thick the chicken piece was.

After that I served my bf and my lunch. The rest I put in the freezer for the rest of the week. To my surprise it was pretty tasty! Even my boyfriend loved his lunch. So the rest of the week is going to be very tasty. As for the side I just boiled some broccoli and threw it in.

Meatloaf Meltdown

Every now and then I like to switch up my recipes. Since my bf is diabetic I tend to explore meals that he can enjoy too.

So on Monday I decided to try out this new recipe for Bacon Meatloaf.

Here is how it turned out for me.

So I got all the ingredients that it asked for and prepped everything.

I combined all the ingredients and put it into a 12″ glass pan. After that I applied bacon on top to cover the whole thing. What the person never mentioned is the fact that it will be so fatty that the juices will make it hard to crisp the bacon.

So as I pulled it out of the oven I poured out all the juices and put it back in the oven for another 20 minutes. I wanted to make a side dish so I made Cauliflower mash potatoes (without the potato). By the time both were done we were already hungry so I apology for the cut meatloaf.

When I had my first bite it was disappointing. Since the ingredients weren’t measured to be balance correctly I had some bites that tasted good and other that tasted bland. My bf tried to be nice and say that it was okay. But I didn’t bite my tongue when I said I hated it. After that one piece I did not go back for left overs if anything I told my bf to throw the rest away. Made me sad that I wasted all this meat and food on a dish that was such a pain to eat.

As I served myself more mash cauliflower my bf said that I should probably stick to my original recipe and I couldn’t agree more. But the Cauliflower was beyond delicious. All you do is boil it until it is tender then throw it into the food processor with olive oil, butter, salt and pepper.

This Weeks Lesson

Happy Friday!

I so happy that the end of this week finally came. I have been so stressed out trying to make sure I am on top of celebrating everyone’s birthday. This week and next week I have friends and family that have birthday’s back to back to each other.

This week it was my Dad’s birthday (2nd), Boyfriend’s (7th),  my friend Jesse (8th), my Mom (9th) and my bf Mom (10th). So that was pretty hectic! I’m so grateful that my Mom and boyfriend don’t mind sharing the same weekend.

With everyone sharing the same month it becomes overwhelming so this year I learned some new things. One being that it isn’t always about the amount of money you spend on someone but the amount of effort.

This year for my boyfriends birthday I decided to approach it with a different mentality. Since I love getting an amazing response from my gifts I always go big or go home. So as I was on Best Buy’s website, I was browsing their gaming section to see what new toy I can get him. Once I looked through all the pages of products I found myself seeing nothing that he would love. I was rattling my brain on what would be a great gift. Then it hit me, I wanted to give him multiple surprises. I wanted to surprise him in the morning, while he was at work and when he came home.

For his Morning surprise I put a note on the mirror that said Good Morning and to go to the kitchen for his surprise. In the kitchen I taped a sign that said surprise inside with a balloon to the fridge. Inside the fridge I made him a lunch from scratch with some fruit and beef jerky I got from Whole Foods. Right in front of his bagged lunch was a handmade card. I jotted down some things that I love about him and how much he means to me. My whole goal was to make sure that he started his day off right.

When I got to work I wanted to create a nice photo collage of him and all the photos we have together. So I wrote a sweet note and posted it on Facebook. He loved it so much and people were complementing me on how nice it looked.

Here is where the headache really started. So my plan was when I get home I have two hours to bake a cake and decorate while I’m waiting.

What I didn’t know was that baking a cake with coconut flour gets pretty tricky especially if you have never worked with it. I decided to be bold and make him a sugar- free, low carb cake. So as I was mixing all the ingredients together I started noticing that it was pretty thick and hard to stir. Before I started panicking I kept adding water and even skim milk  to the mixture to see if it changed. Well sadly it didn’t but I was running out of time and I said, ” F*** it I’m just going to put it in the oven.”

One task was taken care of, so now I had to tackle decorating. I had this idea for his last surprise to tape a note outside the door to go to the kitchen, that a surprise is waiting for him. I was going to make a balloon avalanche so when he open the kitchen door balloons were just going to fall on him. I was going to be inside waiting with a cake with candles and sing him happy birthday.

But of course things didn’t go as I imagined so I just had to adapt. I hung the streamers and began to blow up the balloons. Just to do a time check I text my bf to let me know when he is almost home and what did he respond with… 10 mins away. So the idea of an avalanche was thrown out the window.

I ended up placing the balloons on the floor, bed, couch and on his desk area. I took the cake out and started putting in the candles because clearly there wasn’t any time to wait for it to cool. So as he walked in and was surprised by the decoration I started to sing to him.

For his gift I got him a Pacific candle and massage oil from Whole Foods. He absolutely loved it and I was beyond relieved. I told him of my ideas of getting him something expensive and he said that I chose the perfect gift. After he opened his gift we went to Gen (Korean BBQ restaurant) and we had a feast since it was all you can eat.

At the end of the day everything fell into place and made it one for the books. It taught me not to get so invested in an idea because some times things don’t go as planned. Another thing it taught me is that the gift means more when it comes from a place of love instead of money. I think that’s why I fell in love with my bf because material things don’t mean anything to him he prefers love.

 

P.s. The cake I made was okay, I had some left over batter and the cupcakes saved the day. While the cake ended up in the trash. You live and you learn.
