This Weeks Lesson

Happy Friday!

I so happy that the end of this week finally came. I have been so stressed out trying to make sure I am on top of celebrating everyone’s birthday. This week and next week I have friends and family that have birthday’s back to back to each other.

This week it was my Dad’s birthday (2nd), Boyfriend’s (7th),  my friend Jesse (8th), my Mom (9th) and my bf Mom (10th). So that was pretty hectic! I’m so grateful that my Mom and boyfriend don’t mind sharing the same weekend.

With everyone sharing the same month it becomes overwhelming so this year I learned some new things. One being that it isn’t always about the amount of money you spend on someone but the amount of effort.

This year for my boyfriends birthday I decided to approach it with a different mentality. Since I love getting an amazing response from my gifts I always go big or go home. So as I was on Best Buy’s website, I was browsing their gaming section to see what new toy I can get him. Once I looked through all the pages of products I found myself seeing nothing that he would love. I was rattling my brain on what would be a great gift. Then it hit me, I wanted to give him multiple surprises. I wanted to surprise him in the morning, while he was at work and when he came home.

For his Morning surprise I put a note on the mirror that said Good Morning and to go to the kitchen for his surprise. In the kitchen I taped a sign that said surprise inside with a balloon to the fridge. Inside the fridge I made him a lunch from scratch with some fruit and beef jerky I got from Whole Foods. Right in front of his bagged lunch was a handmade card. I jotted down some things that I love about him and how much he means to me. My whole goal was to make sure that he started his day off right.

When I got to work I wanted to create a nice photo collage of him and all the photos we have together. So I wrote a sweet note and posted it on Facebook. He loved it so much and people were complementing me on how nice it looked.

Here is where the headache really started. So my plan was when I get home I have two hours to bake a cake and decorate while I’m waiting.

What I didn’t know was that baking a cake with coconut flour gets pretty tricky especially if you have never worked with it. I decided to be bold and make him a sugar- free, low carb cake. So as I was mixing all the ingredients together I started noticing that it was pretty thick and hard to stir. Before I started panicking I kept adding water and even skim milk  to the mixture to see if it changed. Well sadly it didn’t but I was running out of time and I said, ” F*** it I’m just going to put it in the oven.”

One task was taken care of, so now I had to tackle decorating. I had this idea for his last surprise to tape a note outside the door to go to the kitchen, that a surprise is waiting for him. I was going to make a balloon avalanche so when he open the kitchen door balloons were just going to fall on him. I was going to be inside waiting with a cake with candles and sing him happy birthday.

But of course things didn’t go as I imagined so I just had to adapt. I hung the streamers and began to blow up the balloons. Just to do a time check I text my bf to let me know when he is almost home and what did he respond with… 10 mins away. So the idea of an avalanche was thrown out the window.

I ended up placing the balloons on the floor, bed, couch and on his desk area. I took the cake out and started putting in the candles because clearly there wasn’t any time to wait for it to cool. So as he walked in and was surprised by the decoration I started to sing to him.

For his gift I got him a Pacific candle and massage oil from Whole Foods. He absolutely loved it and I was beyond relieved. I told him of my ideas of getting him something expensive and he said that I chose the perfect gift. After he opened his gift we went to Gen (Korean BBQ restaurant) and we had a feast since it was all you can eat.

At the end of the day everything fell into place and made it one for the books. It taught me not to get so invested in an idea because some times things don’t go as planned. Another thing it taught me is that the gift means more when it comes from a place of love instead of money. I think that’s why I fell in love with my bf because material things don’t mean anything to him he prefers love.

P.s. The cake I made was okay, I had some left over batter and the cupcakes saved the day. While the cake ended up in the trash. You live and you learn.

DisneyLand

Yesterday was my sister’s birthday and we decided to go to Disneyland.

Since it was our last day as annual passholder’s I decided to take the day off of work. My mom and sister picked me up with Mc’dees and we were off.

We decided to meet my niece and cousin in Disneyland because she wanted to go meet the Star Wars crew. Since us three aren’t really any die hard fans we went on Radiator Speed Racer.

Once we met up we started to go on all the rides with them since they had to leave early. We went on the Buzz Lightyear, Matterhorn,  Its a Small World, Alice in Wonderland Tea Cups, Haunted Mansion and Thunder Mountain.

After that we went and had some linner (Lunch and Dinner) at the Plaza Inn. I had their fried chicken, green beans and mash potatoes. Since it was my sister’s birthday the crew member from the restaurant decided to make her feel special.  She was given a red rose and jam with a candle on top. This cute old man brought out his harmonica and began to sing to her and others that were also celebrating their birthdays.

We also went and got some treats after. My niece and sister got the Death by Darth. My mom, cousin and I had their Peppermint Beignets. I recommend trying them both. Later I bought a Mint Julep which is really refreshing and I got myself a cool bracelet.

Right when My niece and cousin were about to leave me aunt Sandra decided to join us.

We went on Buzz Lightyear again but got stuck and had to get taken out of the ride. My sister and I had fast passes for Space Mountain but since its the season of the force it was called Hyperspace Mountain. It was so awesome, if you are a die hard Star Wars fan you MUST get on this ride.

Meanwhile my aunt and mom went on the Buzz Lightyear and the Haunted Mansion since my aunt didn’t get to go on it with us. When we got out of the ride we met them at Pirates of the Caribbean.

When we were waiting in line my aunt surprises us and told us that with careful consideration they renewed our passes!

All in all it was a great day and I hope that my sister enjoyed herself.

* What I forgot to mention was that we say a Disney kitty there. It was so cute sleeping while everyone was oooh-ing and aww-ing at it.

Family Weekend

Happy Monday Everyone

Can you believe Ronda got knocked out!!! hahaha Sorry I just couldn’t wait to share with you my amazement for KO.

This weekend was pretty amazing considering what I was doing. On Saturday was my grandma’s birthday. Our whole family came together to throw her a party. I rarely get to see my whole family together, so when we are the whole house is full of laughter, love and memories. My godfather made my favorite food which was birria de res and my godmother made the rice and beans.

Let me tell you that the food was perfection! Everything was on point and you could taste all the hard work put into it. I was extremely grateful that they made all the food for our hungry family.

After we ate all the men in my family including my boyfriend were doing everything to make sure that we got to see the fight. They finally got it and everything was at ease. Then of course we lose the stream connection and miss the Ronda Rousey fight with Holly Holms. All we heard was the reaction from my cousins phone since he still had a steam connection.

Before we rushed home to see how Ronda lost, we sang my grandma Happy Birthday. I wanted to buy her this special Lotus Musical Candle I saw. I thought it was so amazing that my grandma deserved it. With the stress of almost burning the house down I asked my sister to record everything. The next day I finally saw the video and the excitement and happiness I saw on her face was absolutely priceless. It made my day knowing that she felt like the Queen she is.

When we got home we saw the whole thing and it was amazing! I loved how humble and truly overjoyed Holly was for winning the title. Seeing her dominate Ronda was beautiful and so magical. You could really tell that she was in her zone.

I know I can’t wait to see her next fight and see her grow as an MMA fighter.

Have an amazing Monday!

It’s FRIDAY!!

This morning I woke up so happy its finally FRIDAY! I love when the weekend comes so quickly because I get to just relax and go on adventures with MLB. I know that I’m really excited this weekend because of two reason. Number one it is my grandma;s birthday so we are having a family party with a lot of amazing food!!! Reason number two Ronda Rousey is fighting on Saturday. Now I am not a huge fan of hers but I respect her and what she is capable of. She has this Floyd Mayweather personality that I don’t like so I am rooting for Holly Holm. I really want her to win not only because she is an amazing boxer but I feel like she has the potential to actually beat Ronda.

Here is some of my favorite music that captures my excitement for this weekend! Hope you guys enjoy!

I Don’t know about you but I’m feeling 22

The best kind of people are the ones that come into your life, and make you see the sun where you once saw clouds. The people that believe in you so much, you start to believe in you too. The people that love you, simply for being you. The once in a lifetime kind of people.:

This weekend was pretty freaken AMAZING! I was completely surprised of how much fun I have had this weekend. My boyfriend surprised me with a trip to Catalina for my birthday. Even though I was feeling sick as a dog, I knew that I needed to be out and get some sun.

IMG_2410IMG_2443

I got some breakfast before we got on the boat. I order a medium black coffee with a breakfast burrito and it only cost me $10.

The boat ride was really fun, I loved the motion of the sea rocking the boat. We met a nice couple on the way and they were nice enough to let us have some of their sunscreen.

IMG_2442

Once we got there, we rented some mountain bikes to ride around the island. After that we headed to Buffalo Nickel to get my free birthday lunch. I order the nachos, so I could save room for dinner and my boyfriend just order some fries.

IMG_2444IMG_2445

We rode down some of there beaches and they were soo beautiful. You could even see right threw the water! There were so many fishes and colorful pebbles all around the water.

IMG_2431IMG_2435IMG_2433IMG_2432

After riding the main road we come across some small stores. There was one in particular that I fell in love with. The store had a beautiful mannequin inside the store that was covered in pieces of mirrors. Outside the store were two unique prize machines along with this vibrant eagle. I ended up putting a dollar into one of the prize machines and got a clear beaded bracelet. My fortune was for understanding.

IMG_2434IMG_2429IMG_2426

Once we were done checking out all the little shops we headed to our couples massage. I can’t say this enough but the massage we got there was so MINDBLOWING! I came in feeling sick and weak and I left feeling like a million bucks. Its so amazing that a massage can get rid of any flu or cold. The girl I got had skinny fingers just like me so that made getting into places in my shoulder easy. Shortly after we headed to the beach to sun bathe a little. Then 4:30 came and it was time to head home.

IMG_2405

We got back to our car at 6:00 and ended our night with some spaghetti and seafood. The next day was a family day so my mom and aunt made my favorite dish. They made some empanada’s and some pozole. My mom, aunt Sandra, grandma, sister, cousin’s, niece, nephew and boyfriend came to celebrate with me.

My Birthday Song

I’m turning 22 in ten days and this whole month I have been having mixed thoughts about the whole idea. This year I wasn’t at all excited about my birthday which is weird for me. I found myself dreading the idea of it coming soon. I honestly didn’t know how much I was avoiding the topic or day until I realized how close it really was.

This month has just been crazy with work and trying to figure out a way to start paying off loans when they kick in on December. With everything that I’m dealing with my own birthday didn’t meet the importance factor. So I wanted to skip over it because it is just another day.

With all that going on I wanted to do some shadow work and figure out what is causing all this. What I found out is that I’m afraid of change. I’m afraid of getting another job or leaving my job. I’m afraid on trying to start my side business. I’m afraid of growing up and forgetting my inner child. But most importantly I’m afraid that change will bring nothing but failure. For months I have been struggling and now I know that I just have to embrace it. I have to remember to be fearless and welcome any change even if its out of my comfort zone.

So throughout the daily stresses and worries this song relaxes me. It makes me feel safe and comforted knowing that others share the same feelings towards change. I hope you enjoy this amazing song and that it brings you some love/ comfort.

Love,

Erika

The Happiest Place in the World

Some of you don’t know that I have an annual pass to Disney. This year I really haven’t had the opportunity to go to Disneyland for a full whole day. When I go with my family, we usually go right after work.

My family go Disney crazy, we are all obsessed to the point where we know the rides on both parks. It’s because of that, that going with others isn’t that fun. They tend to complain more and not enjoy the innocents of being a child again.

So when I graduated I told my boyfriend that we have to go together because once this year is over my pass ends. After seeing the current new prices I won’t be renewing it either. He finally caved and said he would go with me.

IMG_2305

On Thursday we went, I made sure that picked the right day when it wasn’t going to be too crowded. We went to McDonalds before we went to Disney just to get some breakfast. After that we headed straight to Disney California Adventures.

IMG_2328IMG_2307IMG_2308IMG_2310

I love that park because it more for adults; so you have a little more wild rides there. We had their must have corn dog and ice cream by the pier. The rides we went on were The Little Mermaid, Goofy Flying School, Toy Story Mania, Radiator Springs Racers and Soarin’ Over California.

IMG_2331IMG_2330IMG_2319IMG_2321IMG_2314

After that we went over to rent a wheelchair since me boyfriends leg was acting up. I think pushing him throughout the rest of the day was such a workout. Especially since there is so many slopes in Disneyland. With all that pushing we would take breaks and try some treats that were new. This time I tried their Mint Julep and Pumpkin Beignets and they were so bomb!! I completely fell in love with the beignets and as for dinner we had some mouth watering good fried chicken. The place brought us in because of the smell, honestly I would have never knew that Disneyland sold this dank fried chicken.  The rides we got on were Pirates of the Caribbean, Haunted Mansion, Indiana Jones, Space Mountain, It’s a Small World, Alice in Wonderland and Star Tours.

IMG_2336IMG_2329IMG_2327

When the park hit 10:30 we left to catch the tram. As I was aching in pain from all the walking and pushing, I thought that today was the best day ever. I got to experience Disney with my best friend. This was honestly the best birthday ever and its not even my birthday yet lol.

Hope you guys have a fun Monday,

Celebrating Birthday’s

Good Morning Good Looking!

Yesterday I spent the day celebrating my loves birthday. We started the celebration this weekend since his birthday fell on Labor Day. But since I had to work on Monday I went in early so I could be able to afternoon together.

We had dinner at (enter here) and then went to get massages. When the night was almost over I surprised him with his favorite Red Velvet cupcakes and Napoleon dulce de leche.

When looking for the best delicious Red Velvet cupcake my niece and nephew recommended Porto’s. My boyfriend and I were anything but disappointed. They were so delicious! For the price and long ass line I had to wait, it was worth it. I highly recommend that if you have a sweet tooth or are craving a really good sandwich to check it out.

They are food and treats are affordable. But be careful what time and day you decide to go because on holidays like labor day they are PACKED.

Personally I love birthdays whether they are my own or others. I love going out of my way to buy something that will make them happy or feel loved. Every year I make sure to send an amazing loving text to close friends reminding them how special they are to me. I remind them how grateful I am, that they born and that I get another year to celebrate with them.

So if you are a September baby I hope that on your day you feel special. That you know that you mean the world to someone.
