Friday Madness

Now that Christmas is around the corner I can’t help but spend this week reflecting on how soon it will be 2017.

Apart of me is excited for a new year with new beginnings. But there is still some sadness of how fast this year went by. There are a lot of unresolved things that I need to tackle before I dive into the new year.

Some self reflecting I believe is needed in order for me to properly welcome 2017. Just yesterday at Target I realized how crazy people are getting over buying gifts. One man was starting to get aggressive with one of the employees just yelling and justifying his behavior towards another employee.

So many of us forget what the holidays represents and I hate to burst anyone’s bubble but its not a designer bag or an IPhone. It is simply being surrounded with the people that love you and of course some delicious food. One of my favorite memories when I was little was having all my cousins, aunts and uncles together at my grandma’s house. We would all wait until midnight to open our gifts.

Now we are lucky if one day out of the year we all see each other. Just as we get older our responsibilities change and many of us sadly have to work during the holidays. So if by chance we are all under the same roof that alone is just an amazing gift in itself.

I say this because if you decide to do some Christmas shopping this weekend or even during next week, please stay mindful of the employees. They are just like you and I, except they have to put up with this madness and crazy customers. So stay safe and mindful of others .

Monday Motivation

This weekend I got the chance to get away from the everyday and visit my hometown.

I love going back home and recharging myself. Something about a small town makes all the city problems just fade away.

Since I live in an apartment we aren’t really allowed any animals so I love getting the extra cuddle time with my cats and dog. Whenever I go, I have to make sure I visit everyone that I rarely get to see. One stop that I always make it a point to go and see is my grandma. She always makes me feel loved and missed. Everyone gets excited when I come into town and it feels like I never have enough time with them. I guess that’s why it’s always hard to say goodbye.

But the amount of love and happiness I receive when I visit my family and friends is so heart warming. It can honestly make all your problems completely disappear. No matter what stresses I have they always let me know that they are right next to me cheering me on.

So this weeks quote is all about leaving that negativity out of your everyday and embrace the positive.

 

 

My Original Chef

Many people would never guess that my boyfriend was the only one in our relationship that really knew how to cook. I was 20 years old when I met him and sometimes it shocks me how much I have learned from him. He is not just my boyfriend but my role model.

So as I watched him, I began to pick up some cooking skills. My skills improved significantly that my boyfriend stopped cooking. Now there are moments when I miss his cooking. As any good boyfriend would do on my birthday month, he surprised me with a meal.

There is a local Asian market called H Mart and it is the best place to go treat hunting. We found some delicious ribs there and decided to buy some and make it at home. So today I will be sharing how my boyfriend makes short ribs.

First you put in some oil, we used Canola oil. Once the pan is slightly warmed you slowly put in the meat.

We cooked each side for about 3 minutes each.

Once it has brown you want to take the meat to the cutting board and chop it into pieces.

Then throw it back into the pan until it is crispy.

When that is all done we get a spoonful of rice and enjoy them together.

Motivational Monday

Happy Monday Everyone!

Hopefully getting into work wasn’t that hard today. This weekend I decided to go visit my family in Hesperia, CA. I love coming home because of the peace and quiet. Another reason I love going home is that I get reminded of how much I am loved and missed (that’s why its hard to come back).

I always find it hard to do everything I want and be able to see everyone. The main places I make a priority to go to are my mom’s house, my grandma’s house and my best friend Vanessa’s apartment. There are days like yesterday that I leave feeling sad because I don’t know the next time I will get to see them. Its mostly because I feel like I never spend enough time with them even when I do see them. It forces me to remember that everyday is precious and that nothing and no one should be taken for granted.

After 3 days away from my boyfriend it made me not only miss my comfy bed but his warm, strong bear hugs. As soon as I saw his face I felt back at home.
I shared everything I did and who I saw. I told him that I gave my dog Muffin a little mani pedi. And since she was a good girl I spoiled her with some dog treats. I even got some treats for my cat too so she wouldn’t get jealous (lol).

I truly loved my weekend away. I don’t know when but next time I go I’m bringing my boyfriend with me 😉

The best kind of people  are the ones that come  into your life, and make  you see the sun where  you once saw clouds.  The people that believe  in you so much, you start  to believe in you too. The people that love you, simply for being you. The once in a lifetime  kind of people.:

DisneyLand

Yesterday was my sister’s birthday and we decided to go to Disneyland.

Since it was our last day as annual passholder’s I decided to take the day off of work. My mom and sister picked me up with Mc’dees and we were off.

We decided to meet my niece and cousin in Disneyland because she wanted to go meet the Star Wars crew. Since us three aren’t really any die hard fans we went on Radiator Speed Racer.

Once we met up we started to go on all the rides with them since they had to leave early. We went on the Buzz Lightyear, Matterhorn,  Its a Small World, Alice in Wonderland Tea Cups, Haunted Mansion and Thunder Mountain.

After that we went and had some linner (Lunch and Dinner) at the Plaza Inn. I had their fried chicken, green beans and mash potatoes. Since it was my sister’s birthday the crew member from the restaurant decided to make her feel special.  She was given a red rose and jam with a candle on top. This cute old man brought out his harmonica and began to sing to her and others that were also celebrating their birthdays.

We also went and got some treats after. My niece and sister got the Death by Darth. My mom, cousin and I had their Peppermint Beignets. I recommend trying them both. Later I bought a Mint Julep which is really refreshing and I got myself a cool bracelet.

Right when My niece and cousin were about to leave me aunt Sandra decided to join us.

We went on Buzz Lightyear again but got stuck and had to get taken out of the ride. My sister and I had fast passes for Space Mountain but since its the season of the force it was called Hyperspace Mountain. It was so awesome, if you are a die hard Star Wars fan you MUST get on this ride.

Meanwhile my aunt and mom went on the Buzz Lightyear and the Haunted Mansion since my aunt didn’t get to go on it with us. When we got out of the ride we met them at Pirates of the Caribbean.

When we were waiting in line my aunt surprises us and told us that with careful consideration they renewed our passes!

All in all it was a great day and I hope that my sister enjoyed herself.

* What I forgot to mention was that we say a Disney kitty there. It was so cute sleeping while everyone was oooh-ing and aww-ing at it.
