Seattle, Washington

This week I got some amazing news. My boyfriend told me that for our anniversary in February we will be going to Seattle!

Last year we celebrated it in Portland, Oregon and it was such a unforgettable vacation. When we were there we heard about Seattle and how beautiful it is over there. My boyfriend was completely sold on the idea when he heard about a fish market that tosses fish inside.

So now all I’m doing is counting down the days until it is time to take off. I fell in love with researching and planning out our days that I’m beyond excited that I get to do it all over again. If any of you are from Seattle or have ever been there I would love some recommendations on where you think we should go visit? I know that we are planning on eating the majority of our time there because after looking at yelp my taste buds can hardly wait.

Snap Chattin

Some say that when you finally accept yourself you truly become happy.

For most of us it’s a journey that can take a little longer than others. For once I finally fell in love with Snap Chat. It can be so hard to be yourself on social media let alone the internet. People concisely judging you and if you doing blogging as well you know the struggle of bring attention to your blog. I always feel like I selling myself and never can truly be myself.

So when I decided to give Snap Chat another chance it really surprised me.

I love using their Geo-Filters and sharing my stories with others. I felt like it forced me out of my shell (social media wise). Like the other day I shared a 30 second video of me singing along using one of the filters. To tell you the truth it was really fun. I stopped caring if people thought I was a good singer or who saw it. It became more about having fun than being amazing at it.

So I wanted to share this little thing that has bought me joy lately. Comment below what your secret joy is and feel free to like it.

Modern Meow Updates

With careful consideration I decided that Monday, Wednesday and Fridays I will be posting new content. I’m still debating if I want a theme/ category for each day or if I will make it random content.

Detox Tuesdays

I don’t know about you but this Tuesday seems so draining.

Since today is my early day I am planning on a nice cleaning day. For me I love detoxing well…cleaning detoxing. I see my personal space as a reflection of my mind. So cleaning helps me mentally detox.

Strangling I love vacuuming, laundry and doing the dishes. Those specific chores somehow make me feel relaxed and calm. I especially love doing the dishes with my music blasting. It lets me sing and dance away all my problems.

So if you are like me and feel drain take a moment to do something for you.

Portland Bookmarks

Words can’t describe how excited I am to get the chance to visit Portland. My boyfriend and I have been doing so much research about what we should do once we get off the plane.

On yelp we read reviews and bookmark the places we wanted to try out. Let me say that once we saw all that delicious food we started drooling.

Salt and Straw:

The one thing that I’m dying to try is their Bone Marrow ice cream. Yes, you read correctly BONE MARROW. This ice cream was featured in many food network shows like Unique Eats. I am also going to try their Honey Lavender. If you think that it can’t get better, you are wrong. They make their own fresh waffle cones there as you are placing your order.

Portland is also known for their delicious sea critters. The dishes from Norma’s looked so mouth watering. I drooled over their crabs, halibut fish and chips and crab salad

This place is known for their brunch which happens to be my favorite meal. I am dying to try their fried chicken and waffles.

New Year Empanadas

Good Moring Everyone!

Today I thought I would share my empanadas recipe. Every New Years my mom, Aunt Sandra and grandma make empanadas. It’s a tradition that we have made since we were little. But just like any kid I grew up and now  don’t spend it with my family. This year since I was with my boyfriend so I didn’t get the one thing I wait all year for. I thought for the New Year I would step up and make them.

Let me just say that this is not something that is easy and it can be pretty pricey.

Here is what you will need:

  • Flank Steak (1.3-2 Pounds)
  • 2 Fresh Garlic Cloves
  • 2 Bay Leafs
  • Salt
  • 2 Anaheim Peppers
  • 1 Plastic Bag
  • 1/4 of an Onion
  • 2-3 Potatoes Depending on size
  • 3 Tomatoes
  • 1 can of Black Olives
  • Garlic Salt
  • Pepper

So first you cut the steak into rectangles then poke them with a knife. You want to do this so the meat cooks faster. When you bring the meat to a boil, you want to make sure that you scoop out all the foam into the sink or trash. Once it has stopped producing foam you throw in the bay leaf and garlic cloves. You want to cook the meat until it is tender. I got my flank steak from Whole Foods so mine took about 2 and half hours to be really tender.

*You will know the meat is ready to be taken out onto a plate when you can stab through the meat with you spoon effortlessly. DO NOT throw away the broth because you will use that later.

When you are letting the meat cool off you start to roast the Anaheim Peppers on direct flame on both sides. As each pepper is done you want to wait about a minute and put it into a plastic bag to cook off.

You then begin to shred the meat and cut the peppers. You want to make sure you cut off the stem and take out the seeds.

Chop the 1/4 of an onion and 3 tomatoes into cubes. first peel the potatoes, then cut them into cubes and cook them in the broth until tender.

* Be careful not to over cook the potatoes because they will get mushy when all the ingredients get cook together.

In a large skillet you combine all ingredients.

In this order you will put in the ingredients. First you add a little oil for sautéing, then you throw in the onion. When the onion starts getting clear add the meat. After 3 minutes add in the tomatoes. Then you add in the Anaheim peppers after 3 minutes. Once the tomatoes and peppers look a little soggy you thrown in the potatoes (not with the broth).

When everything is mixed you add in the garlic salt, salt and pepper for seasoning. Add to more or less according to your taste buds. Once you got it to your liking add in chopped black olives.

If you want to take the easy route you can buy some premade dough. But if you are like me then homemade is the way to go.

I used this brand and all you have to do is add hot water.

Once you mixed the 2 cups of flour and 1/2 cups of hot water you immediately start kneaded the dough. You do that for about 5 minutes, if it is still sticky and not smooth add in a little more flour.

You get a damp wet cloth and put that over the bowl (where the dough is resting) for about 15 minutes. When you are ready you pull out the size amount of dough you want for the empanada. You use a roller pin that is covered in flour to flatten the dough.

*Make sure that you don’t have thick ones or they will take longer to fry.

When they are nice and thin you fill it with the meat (don’t over stuff). You want to close both sides like a taco and then start rolling the sides of the dough so it closes. Or if it makes it easier for you get a fork and press the fork all along the opening to seal it.

After all of this Bam! You got yourself an empanada.

This was my first ever attempt to making them and they taste just like they were made from my family.  I still am extremely proud of myself and that I pulled it off.

2015 in Review

This year I made the big step and created this blog. The amount of love and support I got was unbelievable.  I can say that I am so proud of myself and what I have accomplished with this blog.

Kat Von D Foundation Review

Every time I am about to run out of my foundation I try out another brand.

I always switch it up, mostly because my skin is consistly changing.

This time I was recommended the Kat Von D Foundation. I like the creamy texture and it’s easy to apply with your fingers.

It does an amazing job covering up an imperfections. I love the 24 hr wear on it because it leaves me completely oil free. On my busiest days I stay matte for at least 9-10 hours.

The only con I have on this foundation is that I had to go to Sephora three times to get the right shade. Kat Von D’s foundation and powder are known to change color with your body heat. So make sure that you get color IQ checked with a Sephora make up artist.
