Things have been pretty crazy lately. I have been trying to keep up with making meals by hand and it’s insane. Who knew that living a diabetic lifestyle would be so hard? The things that you have to cut off for me seemed so extreme. I went from making an easy lunch to making a meal. I use to get away with making a sandwich and having a soup with it. But now I have to lower the amount of carbs and sodium I eat. So there are days like yesterday when I eat my lunch and am still hungry. I honestly think that if I start adding more healthy cheap snacks to my daily routine I’ll put an end to that hunger.
There are some things that I have to take from this week. You just have to do a lot of research and I’m not just talking about deciding what you are going to eat. Groceries tend to add up and what I think is funny is that eating healthier cost A LOT more. So making it a habit to look at store ad’s and clip coupons is important.
Another thing I took away was that creating these diabetic friendly meals were easy. I loved that there was so much information out there about this disease. Since my loved one is waiting on their diagnosis of what kind of diabetes they have we have changed our eating habits for the severe kind. So I picked dinners that would be easy to make and were affordable. I was so afraid that I was going to think that the food was bland and nasty but it wasn’t. I was so shocked after my first meal because I honestly thought that, that was the best meal I have EVER made. It was tasty, flavorful and healthy. Something that I never thought would be together.
One thing I learned for next week is to prep food. I hate doing it and having to keep making food even after I’m done making dinner. But when I put it off until the morning I am either late to work or I never get up to actually do it. I also have to plan out when and what time we are going to work out. This one is going to be a challenge but it WILL happen.
